皮をむくと、つるりとあらわれる葱の白さ。「むげて」という言葉の感触が、葱の肌ざわりそのままだ。台所のひと仕事のなかに、はっとするような白がある。Peel it and out slides the smooth whiteness of a leek. The feel of the word mugete — to slip off — is the very feel of the leek's skin. In one small chore in the kitchen there is a whiteness that stops you short.
